Weekend Wrap-Up

Our weekend was spent in Coban.  We are quickly getting readjusted to life here.  The problem is we know it is for a short time and therefore we don't want to unpack much and get too settled in because we hope to be on the move again real soon.  Living in transition is not very fun. 
(I didn't take any photos over the weekend so I'm adding a few of Cruz as filler :-)
Friday we met Miss Fran, the Groff's, and Linda Whitmer for lunch.  It was our first time to meet Linda face to face but felt like we knew her because Miss Fran speaks of her so often.  She is a former missionary to the K'ekchi' and served here for many years.  She is back for a few weeks doing some visiting.   
Friday night I cooked Lil' Cheddar Meatloaves for dinner.  They are one of our favorites!  Here is the recipe:
1 egg
1/3 cup milk
1 cup (4 oz.) shredded cheddar cheese
1/2 cup quick- cooking oats
1/2 cup chopped onion
1 tsp. salt
1 pound lean ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1 1/2 tsps. prepared mustard
Beat egg and milk.  Stir in cheese, oats, onion, and salt.  Add beef  and mix well.  Shape into 6-8 palm sized loaves.  Place in a greased 13x9 dish.  Combine ketchep, brown sugar, and mustard and spoon over loaves.  Bake uncovered @ 350 for 45 minutes.  YUM!
Saturday we got out and about around town for a while.  It was fun to see what all had changed and what new things were around.  For dinner I cooked Bacon Jack Chicken and it was yummy as well.  If you read our blog often you'll know that we are all about eating.  It doesn't matter if it's eating out or at home- we ENJOY mealtimes! :-) 
Sunday we attended church in Coban and invited Miss Fran to join us.  Afterwards we took her out to eat for lunch at La Abuela's.  It was good to visit with her.  We came home and all three took a great nap. 
Today we head back up north for house hunting trip #2.  We plan to spend a few days there looking and asking around.  Please be in prayer for us to find just the right place. Pray that God would show us just where we need to be!

    I don't know how Cruz can get any cuter or sweeter...but he does! Love that big smile! :)
