Oh soo yummy!

In case I haven't mentioned it before, I love to cook! I love to read recipes and try new things. I recently found this new recipe on-line and tried it tonight. It was soo quick and easy. It will definitely be added to our list of favorites.
SPICY SHEPHERD'S PIE (although not spicy at all)
INGREDIENTS-
1 pound ground beef
1/2 onion, chopped
1 can black beans, drained
1 can diced tomatoes
1 can corn, drained
1 packet taco seasoning
1 tsp chili powder
4 cups mashed potatoes
1 cup grated cheddar cheese

DIRECTIONS-
Brown ground beef with onion; add all ingredients except potatoes and cheese. Simmer 2-3 minutes. Pour into 9x13" pan. Top with 1/2 cup cheese. Spread mashed potatoes over the cheese and meat mixture. Top with remaining cheese. Bake at 350 for about 25-30 min.
-serves 8
David walked next door and bought us some fresh tortillas from some K'ekchi' ladies. They went perfect with our meal. We usually keep our doors opened all day. This was the view from our table tonight as we were eating dinner! Isn't that beautiful!!!

  4. This seems very yummy and I love black beans.
    I'm stopping by from Tasty Tuesdays. It must be interesting to be in Guatemala. I have never been down that direction, but I have lived in several different countries.
