Simple & Delicious

As I mentioned in an earlier post, I recently got a subscription to one of my favorite cooking magazines- Simple & Delicious. It is a branch of the Taste of Home magazine.

My first issue just came in and today was the first day I have had to read it. I made a pot of coffee and spent a good bit of time reading it page for page. I then made a grocery list and headed to the store. Tonight for dinner I cooked one of the new recipes I found. It's called Bacon Jack Chicken. It was simple & delicious. I thought I'd share it with you. Here are the ingredients:
BACON JACK CHICKEN
2 boneless skinless chicken breast (I flattened them between Saran Wrap)
1/4 tsp. seasoned salt
2 tbsp. butter
3 bacon strips, halved
1/4 cup sliced mushrooms
1/4 cup sliced onion
3 oz. pepper Jack cheese, shredded (I used a pizza blend)
1 tbsp. grated Parmesan cheese
-sprinkle chicken with seasoned salt. In a nonstick skillet, cook chicken in butter over medium heat for 5-6 minutes on each side. Remove and keep warm.
-In the same skillet, cook bacon until crisp. Remove to paper towels to drain. Saute onion and mushrooms in drippings. Return chicken to pan. Top with bacon, onion, mushrooms, and cheeses. Cover and let stand for 2-3 minutes until cheese melts. 2 servings
